Herbivore's Delight

Today is day one of my attempt at vegetarianism. It went pretty smoothly all day. I woke up kind of late and ended up having breakfast at lunch (oatmeal and a banana) and had some supper at work (some peach yogurt and a spinach salad with raspberry vinigrette). My first actual challenge of will came when I got home from work and opened the fridge. Apparently hamburgers were for supper. I really like barbequed food and these burgers looked quite nice (complete with melted cheese slices). Anyways I was strong and got through it. I had an apple and some almonds and I think I'm gunna have some toast right away here...brb...

I snack a lot on things like toast, fruit, almonds and dates. I like finger vegetables like carrots and celery too-- but I'm definately going to be looking for a greater diversity of snack foods. I'm still going to be eating fish, and I really love tuna, so I don't think alternative sources of protein will be a problem (especially with the amounts of almonds, spinach, milk and peanute butter eat). The more I learn about vegetarianism the more I'll make choices about what I will and will not eat. I'm not looking at becoming a hardcore vegan, Miniscule amounts of animal products exist in pretty much everything from shampoo to the obvious leather of a belt. I just want to be more conscious of the food that I eat and the process it take to get from the farm to my table--obviously I'm also looking to increase the organic content of my food as well, it's frustrating that it's so pricy.

So I'm looking for tips and advice. Does anyone have any interesting meat alternatives, any good tofu recipes? I drink a lot of regular milk but enjoy soy milk just as much--the trouble is soy milk is so much more expensive. Does anyone know where I can find cheap organic food? Superstore is starting to increase there supply but it's pretty expensive and I really don't enjoy supporting huge corporations. Any general suggestions about approaching vegetarianism in a safe and balanced way?
